Thai-Style Sweet Potato Wedges
These spicy, salty and sweet loaded wedges are sure to excite your customers.
Ingredients
150g Aviko Sweet Potato Wedges
100g Raw king prawns
3 Tbsp Green Thai curry paste
2 Spring Onions
10g Salted peanuts
Handful Coriander
Lime wedges
Bird eye chilli (optional)
Method
Cook Aviko Sweet Potato Wedges as per packet instruction
Coat prawns with curry paste and fry for 3-4 minutes
Toss prawns with sweet potato wedges and arrange on a serving board
Slice spring onions and chop peanuts then sprinkle on top
Serve with lime wedges and optional sliced chilli
