Meat Free Totchos
Loaded Hash Brown Bites make the perfect side or sharer, this delicious Tex Mex-inspired recipe combines spiced mushrooms, avocado and chilli.
Ingredients
100g Aviko Hash Brown Bites
50g Mushrooms
2 Tbsp Fajita seasoning
15g Corn
1 Red chilli
15g Coriander leaves
20ml Sour cream
Method
- Cook Aviko Hash Brown Bites as per packet
- Add mushrooms and fajita seasoning to a food processor and blend until fine
- Stir fry mushrooms in a pan
- Toast corn kernels in a pan
- Finely slice red chillis
- Roughly chop coriander
- To serve load Hash Brown Bites with mushroom mix, corn, chilli, coriander and sour cream
