Keema Brunch Hash

Stir fried spiced lamb mince with kale, harissa sauce, toasted pine nuts and a crispy fried egg all piled on a bed of deliciously moreish Aviko Hash Brown Bites.

Ingredients 

100g Aviko Hash Brown Bites 

100g Lamb mince

15g Curry paste

2 Tbsp Minced garlic

1 Tbsp chopped ginger

1/2 Tsp salt

1 egg

50g Kale

15g Pine nuts

Harissa Mayo

30g Mayonnaise

10g Harissa

 

Method

  • Cook Aviko Hash Brown Bites as per packet
  • Stir fry curry paste, ginger and garlic for a minute
  • Add mince and cook until brown
  • Roughly chop kale and add to pan
  • Fry egg
  • Toast pine nuts
  • Mix mayo with harissa
  • To serve put Hash Brown Bites in a bowl and top with mince mixture, pine nuts and harissa mayo
