Coronation Chicken Loaded Fries
Ingredients
150g Aviko SuperCrunch 9.5mm Skin On Fries
50g Curry powder
1 Medium white onion
1 Tbsp Vegetable oil
100g Chopped tomatoes
100ml Coconut milk
20g Sultanas
100g Chicken breast
Salt to taste
To Serve
10g Coriander leaves
15g Almond flakes
1 Red chilli
Method
Coat the the chicken breast in half of the curry powder and a pinch of salt
Thinly slice the onion then saute in the vegetable oil
Add the rest of the curry powder to the pan then stir for 1 minute before adding chopped tomatoes and coconut milk
Place the chicken breast under medium grill and cook for 10-15 or until cooked through
Cook Aviko SuperCrunch Fries as per packet instructions
To serve arrange fries in a bowl then top with sliced chicken, curry sauce then top with almond flakes, chopped coriander leaves and sliced chilli
