Ackee Scramble with Hash Brown Rounds
Give your menu a Caribbean twist with ackee, a delicious plant based alternative to egg. Gently scramble the fruit with tomato and spring onion then serve atop our tasty golden hash browns for a wholesome vegan brunch.
Ingredients
3 Aviko Hash Brown Rounds
50g Ackee
1 Spring Onion
15g Red pepper
15g Tomato
1 Tbsp Coriander leaves
Optional additions
Hot sauce
Method
- Cook Aviko Hash Browns as per packet
- Melt butter in pan
- Finely slice spring onion, pepper and tomato
- Drain ackee and gently scramble in pan along with vegetables for 1-2 minutes until warmed through
- Plate up Hash Browns and top with ackee mix and chopped coriander leaves
- Serve with optional hot sauce alongside
